My Big Ole’ Birthday Bash!

 Welp, this post is a month over due, but better late than never, as they say! I had the best birthday, surrounded by my wonderful family and friends….and of course, lots of incredible food!!!!

Since I was trying to enjoy the moments of my special day, I didn’t get too many behind the scenes/ personal photos, but I made sure to take a second to snap photos of the food to share with you guys. I ate like a queen, and probably ate a weeks worth of food in two days!!! Phew.

The night before my birthday, Alex and I made Sweet Potato Gnocchi with a Sage Brown Butter Sauce. It was my first time making gnocchi, and it turned out soooo yummy! I wish I had captured a photo when it was done. I think I will definitely be making them again and documenting it to put on here. Mmmm, I wish I had some right now!!

We celebrated with a glass of apple pie moonshine…one of my all time favorites!

We had a biiiiiig bonfire with Alex’s family, and enjoyed the beautiful night.

Our Friend from Quebec brought an extra special surprise; something I had never tried before: All Dressed Chips. Oh, you delicious chips, where have you been all my life?!? They are a perfect mix of all of our favorite chip flavors: salt and vinegar, BBQ, Pepper, and some other spices that just make them to die for. Thanks again, Luc!

On the morning of my actual birthday, Alex surprised me with a stack of homemade Cinnamon Roll Pancakes. Yep- you heard me right. Oh. My. Lanta. These things were HEAVENLY!! I think I picked a pretty amazing guy. ;)

We went to my parents house to celebrate the day, and luckily it was GORGEOUS outside. Having an April birthday means that 80% of my birthdays have been rainy. April showers bring May flowers, after all!

and my signature cocktail for this year. A perfect blend of watermelon, strawberries, coconut cream, and spiced rum.

I named it “The Beach Girl”, not only because the flavors remind me of a beach vacation, but because when I was little, my Dad gave me that as a nickname.  It was always my favorite place to be, and he and I would stay there all day, even after everyone else went back to the house. The name just stuck!

The Beach Girl

Makes a Pitcher (Serves about 8)

+ 4 cups cubed seedless watermelon

+ 2 cups frozen strawberries

+ 1/2 cup coconut cream

+ 1/4 cup spiced rum (or more to taste)

Blend all of the ingredients together. You may need to blend the fruit in batches to have enough room. Store the pitcher in the freezer, stirring occasionally,  until it becomes a refreshing slushy consistency. Sip while imagining you’re on the beach. Or even better, enjoy it on an actual beach!!

To End it all, Alex brought me a stack of glazed donuts with candles. He’s not much of a baker (although he loves to cook), but I prefer donuts to cake anyway!! Needless to say, I was FULL; and not just from food…but so much love, laughter, and good times. Thanks to everyone for making my birthday so excellent.
